  • Make The Filling. In a medium saucepan, combine cranberries, sugar, cornstarch, orange zest, orange juice, and a small pinch of salt. Heat the mixture over medium heat, using the back of a spatula to gently crush the cranberries as they cook. Continue cooking for 15-20 minutes, stirring constantly. At first, the mixture may seem dry, but as the cranberries soften and break down, they will release liquid and the sauce will thicken. Cook until the cranberry filling comes to a simmer and is thick enough to coat the back of your spatula, leaving a visible trail when you drag it across the bottom of the pan (it should resemble a thick, jam-like cranberry sauce).
